Extracted by steam distillation from the parts aeree flowering of Satureja hortensis L. (savory estiva, summer savory, sarriette of ete), plant herbaceous annual of the Lamiaceae native of the Southern Europe and of the Asia western, cultivated in all the Mediterranean as herb aromatic from kitchen and plant medicinal. The savory estiva si distingue from the montana (S. montana, perennial) for the properties more blande and for a phytochemical profile slightly different. The phytochemical profile is dominated by carvacrol (20-45%) and thymol (15-35%) — phenols antibacterial with activity documented against AND. coli, Staphylococcus aureus and Candida albicans — with gamma-terpinene, para-cimene and beta-caryophyllene. As all the oils fenolic, requires diluition accurata (max 0.5-1%) for dermocausticita. The savory estiva has a profile phenolic more equilibrato of the montana, with maggiore presence of beta-caryophyllene which mitiga parzially the skin irritation. In aromatherapy and used as antibacterial, antifungal, immune-stimulating, digestive bitter, tonic general and as remedy winter in the infections of the respiratory tract. Contraindicated during pregnancy and in children. Top note warm, phenolic and herbaceous.
